This semester I have had the opportunity to finish up my required science classes at TCU by taking contemporary issues in nutrition. With each science class you also have to take a lab section. For this nutrition class the lab consists of several things, but for the most part you have several opportunities to go to a kitchen lab and cook. I remembered writing about the first day I cooked in that class this semester because it is really something to be thankful for. I cannot tell you how much I appreciate not having to go to a lecture hall or computer lab and do work that way each week. It has been such a refresher.
Today we had the final in our lab part of the class and we literally cooked a dish with our group. That was the final. How fun is that? Every group cooked something from a different country and then when we ate. We had food from all over the world. I really enjoyed it, not to mention the food was so good. My group cooked Huevos rancheros and it seemed to be liked by all the other groups!
It will be really cool to take the things I learned in this part of the class and apply them when I have a kitchen of my own next year. I will kind of be sad to not get to go to the cooking lab on Tuesday's, but at the same time I am super happy that we wrapped up lab this week because the next two weeks are going to be crazy busy. I will appreciate adding that time back to my Tuesday's.
Prayers would be great because I woke up this morning not feeling too great and now is not the time to be sick. I mean I never hope to be sick, but if I am going to be sick, Lord, just not right now. I have a test tomorrow, which you could also lift up, and then several papers and projects due next week. I am a little overwhelmed thinking about it, but I am going to just keep on telling myself to take things one day at a time! No matter what is going on I really don't want to be sick!!
If you are ever needing a nice change in pace I encourage you to get in the kitchen. In an outside of this world recipe and take the time to make it! It really is a nice way to feel productive, yet relax at the same time.
I am thankful that I had the opportunity to be in this class this semester! Lots of fun times, good memories, and fantastic food.

Blessed is an understatement when it comes to my life. Each and every day I am amazed by God's steadfast love. In return, I have claimed this space to show my thanks and whatever else comes along the way.
